I've been playing along with lesson 11 and I understand the R 3 7 chord, but what I'm struggling with is how do you know what notes to play over top of each chord when accompanying or soloing?

I am a beginner, but here is my thinking:
key is Bflat major scale -> Bb C D Eb F G A
I, IV, V -> Bb Eb F and he played R37 Bb7 (Bb/D/Ab), Eb7 (Eb/G/Db), F7 (F/A/Eb)
One idea is to play the major triads for Bb, Eb, F on the top 3 strings (lesson TF032 from 5:12) Bb/D/F Eb/G/Bb F/A/C
also
Bb minor pentatonic = 1 b3 4 5 b7 -> Bb Db Eb F Ab
Bb major pentatonic = 1 2 3 5 6 -> Bb C D F G
