So in the videos B6 and B7 Mr. Fujita talks about strumming in 16th notes. I don't understand how I can strum like how he does without counting 1 e & a 2 e & a 3 e & a 4 e & a very fast and he doesn't even mention counting the strums. How can I "feel" the right timing and strums? Another thing I didn't understand was when he was drumming with his knees.

16th strumming... a lot of notes!
You need more 8th notes and you need to train your body to feel more rhythm.
That's totally okay that you don't get those 16th rhythm at first time.
Don't worry & don't push!
Did you work on tapping those rhythm by hands?
If you cannot do that..., then your rhythm is problem and not about guitar playing.
