I'm just curious, why always practice the triads using C, F, Bb, Eb? what is so special about these four keys? is it because they have 1, 2, and 3 flats? just curious!

This way, simple F (One flat), Bb (2 flats) , Eb (3 flats) also... song like Autumn Leaves C-7 F7 BbMaj7 EbMaj7..

I do not have a definitive answer but if you look at the circle of fifths C is at the top and if you go counter clockwise then it is the circle of fourths. C, F, Bb, Eb. Those keys only differ from their neighbors by a half step (add a flat as you noted). A lot of chord progressions move in 4ths. C has no sharps or flats so it is a good place to start if you are trying to figure out intervals like "what is the 5th of C? Oh it is G."
