Is there ever a point in your guitar playing journey where it’s not useful to learn to play songs, other than for enjoyment? I’ve had all these a-ha moments recently that make some of the songs I know make much more sense, but I still find myself getting frustrated trying to understand more difficult songs. Does this mean my time would be better spent building foundation or would you recommend I keep trying to learn the song?

I think you need to make sure learn foundation: Chromatic scale exercise for technique. Major scale on One String Approach & Triad Inversions for learning the fretboard & any 7th chords, R 3 7 swing groove etc.
Need to do that a few months. Then anytime you can start learning songs by ears!
Once you have a good skills & Ear Training, intervals and harmony... pretty much any songs you can learn by ears.
Any Beatles songs you can learn by ears! They created those songs by ears in real time!
Which songs are difficult learn by ears?
