At about 7:45 in the Autumn Leaves Jazz Standards lesson Tomo says when the progression goes from Gmin7 to C7 to Fmin to Bbmaj7 he says ‘3,6,2,5 you know’. I don’t know what he means. Can he please clarify? Thanks.

I understand the Roman numerals but the song is in Gminor or Bb major and those chords do not correspond to a 3,6,2,5 progression.
Yes, the song is in G minor. All of Tomo's comments are important. Please listen carefully between 7:40 and 8:20 of the lesson video. Tomo mentions that the II V goes to Eb, and that the four chords are "almost like III VI II V" in Eb.
