Hey Tomo, I have decent relative pitch and can recognise solfege in a triad. When I practice my triads, should I be focusing on always naming the inversion or can I just say the solfege? (Eg. Saying 2nd inversion when I play it vs just saying So Do Mi).

Yes. First stage, any triads.... think intervals & inversions so even G triad ...Mi So Do, So Do Mi, Do Mi So... on 123 set strings.
Don't touch the notes until you can sing and hear those notes well.
Ear Training when you practice scales & triads.
Then when you are playing, for performance... don't even think too much anything... Follow the sound.

Definitely you need to say or thing strongly which inversion... in 1-2 seconds... 3 seconds.... too late!
