I just finished essential code, picking, streaming, and muting lessons and I'm taking the Essential music story lessons.

How well should I know each mode before moving on to the next?

I'm currently listening to 05 G Mixolydain lesson, and I understand the concept(ex: why G Mixolydain is same note as C major), but it's too much to keep up with playing solo like you. Is it okay to only take the experience of understanding music theory and getting used to the notes you play? Or do I continue to watch the video enough to copy the solo performance?

Great question. There is not one correct answer for this. But each section about one topic so.
How about this?

When you are learning Mixolydian scale. You learned it and apply that into your playing too.
1) Can you play Mixolydian scale from 2nd string (C), 1st string (F), 5th string (Bb) on one string approach?
2) Can you play Mixolydian scale as one octave from 6th string root, 5th string root, 4th string root?
3) Can you play Mixolydian in 3rds or 6ths (great for blues soloing)

Then you can move to next lesson.
Better to stay a little longer and practice slowly.
Do not rush! Always slower pace.

Copy, transcribe music, chords, solo... always good idea to do.
If you are curious, don't know play like that then you should copy and learn!
