I've been working on arpeggio Level 1 in the triad foundation section. The question I have is can or should I use a mini bar or should I make sure I move between strings/notes. I notice you do the latter on the video but it's more convenient to use a mini bar at times or to rock the finger back and forth to get some of the notes on the strings 1, 2, 3.

Arpeggios are not chord so first you need to make sure that you play each note.
I think you can use as mini shapes but always challenge all possibilities.
This one I need to demonstrate more. It it hard to describe by words. You need to know exact sounds.

Thanks. I was watching another online guitar teacher on YT (Stitch Method) and he said we should play one note at a time not chords. Looks like you agree with this sentiment.

That's correct. Triads are chord (Play same time)
Arpeggios are play each note (not together)
