Hello there Tomofrom England! I have watched a few of your videos on YouTube and decided to subscribe to GW. What a fabulous resource it is! I am 47 and have been "playing" for one year or so and have tried various internet sites but not really gelled with any of them. I believe this will be different because of your teaching methods and a similar outlook to me on things. I am very excited!
I am someone who can play a few chords and scales but does not know how it all fits together. In approaching the lessons, is it best to mix and match the beginner videos with foundation and theory ones or finish the videos for one "section" and then view the other ones?

Maybe triad inversions. You can challenge to learn R 3 7 chord voicings over Blues chord progression.
Simply you can use "search" function and type any key words that you are interested in so you can find right lessons.
Yes, we have so many lessons just because everyone has different personalities & different levels so that everyone can choose own path.
Basically you can mix a few different type lessons.
No need to finish one section to go to another section.
But if you really like one topic then you could finish that section.
Maybe one section... you will continue to focus, then you can add other lessons from other sections.
